Hot Bacon Dressing

INGREDIENTS
5 slices bacon, diced
1/2 cup chopped finely yellow onion
Canola oil
2 tsp. cornstarch mixed with 2 tsp. water
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
Salt and pepper to taste

DIRECTIONS
Fry bacon till crisp. Remove the bacon with a slotted spoon and set aside.

Add onion to bacon fat in pan and cook 5 minutes until onion is soft.

With a slotted spoon, add onion to bacon. Pour bacon fat into a measuring cup and add canola oil to equal 1/2 cup. Add bacon fat to cornstarch mixture and reserve.

Mix together vinegar, water, sugar, salt and pepper in a small saucepan and heat to a boil. Add cornstarch mixture and cook till thickened (1-2 min.). Remove from heat and add bacon and onion. Use while warm.

Makes approximately 1 1/2 cups.

It was not for me the best hot bacon dressing I have ever tried. I like the kind with onions and bacon. I would also like sweet and tangy taste better hot bacon dressing a. It was not as bitey as I want. The search will continue.
