Beer batter

#1
Beer batter

A delicious finger food. Eat your's first because the mob will devour the rest without saving any for the cook.

Ingredients
1 1/2 pounds boneless, skinless chicken breast halves
1 1/2 cups all-purpose flour
1 teaspoon baking powder
2 eggs, beaten
1/2 cup cold beer
3 cups oil for frying

Directions
Rinse chicken, and slice into 1 inch strips.

In a medium bowl, stir together 1 cup flour, and baking powder. Mix in the eggs and beer.

Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C).

Place remaining 1/2 cup flour in a small bowl. Coat chicken strips in flour, then dip floured strips into the batter. Fry a few at a time in hot oil, turning once, until coating is golden brown on both sides.

Remove, and keep warm until serving.

Any particular beer needed? I know that the alcohol will be gone by the time it's done, but I guess that some dark beers could add to the flavour ...

It don't really matter what kind of beer you use but I think you're right, the dark beers would add to the flavor.

Gonna steal your sig about the horse in your meatballs...LMAO, but very true.

Go ahead with the sig, you're welcome ...

Now I just have figure out what beer to use. I once used a dark beer for a beef stew which made it awfully bitter ...
Also skipping the coating in flour. I'm going to use some spicy/salty herbs and dip it in the batter after that. Should work just as well ... I hope.

I've a small problem ...

If it was a decent beer, I'd rather drink it. If it's a bad beer, why would I even consider using it?

Oh well ... seeing that it's not a large amount on the whole of the recipe, I'll take my chances ...
