Camel Toe Soup

Most cuts of camel are very lean and very juicy. This makes camel meat perfect for soups.

Ingredients
1 1/2 lbs camel rump roast (cut into 1/2-inch cubes)
1 camel toe (remove any hair and clean with warm water)
3-4 cups water
3/4 cup dark soy
2 carrots
2 ozs dates
1/2 cup red wine
1/2 cup sugar
3 cloves garlic
1 10-inch piece ginger, sliced
2 star anise
2 cassis-cinnamon sticks
2 pieces dried mandarin peel
2 yellow onions

Instructions
Place all the ingredients (except the camel meat & the camel toe) in a large saucepan and bring to the boil.

When it starts to boil add the camel toe. Simmer on meduim heat for 20 minutes to allow the flavours to infuse.

Remove the camel toe and add camel meat and make sure it is covered with liquid. Add water if needed.

Simmer for 2 - 3 hours until tender.
