Beer batter
Beer batter
A delicious finger food. Eat your's first because the mob will devour the rest without saving any for the cook. Ingredients 1 1/2 pounds boneless, skinless chicken breast halves 1 1/2 cups all-purpose flour 1 teaspoon baking powder 2 eggs, beaten 1/2 cup cold beer 3 cups oil for frying Directions Rinse chicken, and slice into 1 inch strips. In a medium bowl, stir together 1 cup flour, and baking powder. Mix in the eggs and beer. Heat oil in a deep heavy skillet to 375 degrees F (190 degrees C). Place remaining 1/2 cup flour in a small bowl. Coat chicken strips in flour, then dip floured strips into the batter. Fry a few at a time in hot oil, turning once, until coating is golden brown on both sides. Any particular beer needed? I know that the alcohol will be gone by the time it's done, but I guess that some dark beers could add to the flavour ...

It don't really matter what kind of beer you use but I think you're right, the dark beers would add to the flavor.

Go ahead with the sig, you're welcome ...
Now I just have figure out what beer to use. I once used a dark beer for a beef stew which made it awfully bitter ... Also skipping the coating in flour. I'm going to use some spicy/salty herbs and dip it in the batter after that. Should work just as well ... I hope.

I've a small problem ...
If it was a decent beer, I'd rather drink it. If it's a bad beer, why would I even consider using it? Oh well ... seeing that it's not a large amount on the whole of the recipe, I'll take my chances ...
